You need to check out Israel Regardie's book on the Golden Dawn teachings. It gives detailed instructions on a wide variety of Victorian era occult practices.

Another one I really liked was The New Magus by Donald Tyson.

These are mainly from a Hermetic philosophy perspective, but totally applicable to Wicca and neo-paganism. There's hardly that much difference at all in the rituals.
