Turns out skillet bread is good whether you use cast iron or not.
Made a bitchin' flatbread (admittedly on the thicker side, God bless baking powder) with minced garlic, shredded cheese and oregano mixed in the dough.
It's great to have cast iron, but when you don't feel like fucking with all the oiling and preheating, a regular skillet does the job.
