That's probably because lot's of European immigrants are in South America and they knew this would be good to share with their native people.
I mean it's not just immigrants to the New World. It became a staple for the Irish in Ireland shortly after it was introduced there. Unfortunately, they settled on a single breed that didn't grow well in wet climates, which caused a famine during the Little Ice Age.
